A lot of coffee lovers do.
It's become almost a badge of honor.
If the roast date is recent...
It must be fresh.
If it isn't...
Back on the shelf it goes.
At first glance, that makes perfect sense.
So here's a question.
If we're so passionate about fresh coffee...
Why don't we put roast dates on our bags?
Great question.
And the answer has a lot less to do with a date...
...and a lot more to do with your morning.
Freshness Is More Than a Number
Imagine someone hands you a loaf of bread.
They proudly point to the date stamped on the bag.
"Look! It was baked yesterday!"
Fantastic.
Then they mention it spent the last 24 hours sitting in the back seat of their car during the middle of summer.
Suddenly that date doesn't seem quite as important.
Coffee works the same way.
A roast date tells you one piece of the story.
Not the whole story.
Coffee Begins Changing The Moment It's Roasted
One of the things that makes specialty coffee so incredible is that it's constantly changing.
Right after roasting, coffee is releasing carbon dioxide.
The flavors continue developing.
The aromas evolve.
Then, over time, oxygen slowly begins taking those wonderful aromas away again.
Coffee isn't standing still.
It's on a journey.
Which means asking,
"When was it roasted?"
is only part of the question.
A better question is...
"How fresh will it be when I actually brew it?"
Why We Roast to Order
This is where Hidden River is a little different.
We don't roast hundreds of bags hoping someone eventually buys them.
We roast your coffee when you order it.
That means your coffee isn't sitting on a shelf waiting for weeks.
It's roasted.
Packed.
Shipped.
Then it's on its way to your kitchen.
That's the part we care about most.
Not what happened three weeks ago.
What happens when you pour your very first cup.
Does That Mean Roast Dates Are Bad?
Not at all.
In fact, I appreciate why many roasters include them.
They help tell part of the story.
We simply believe there's a better conversation to have.
Fresh coffee isn't a contest to see who can print the newest date on a bag.
Fresh coffee is about giving you the best possible experience when you open it.
Those aren't always the same thing.
So...How Fresh Should Coffee Be?
This is another question I hear all the time.
Ironically...
Coffee that's too fresh isn't always at its best either.
Freshly roasted coffee needs a little time to settle.
Those gases trapped inside the beans begin escaping naturally over the first several days.
That's one reason many specialty coffees actually taste better after a short resting period.
I know...
Coffee is wonderfully complicated.
Fortunately...
Enjoying it doesn't have to be.

We spend so much time chasing numbers.
Dates.
Temperatures.
Grind sizes.
Ratios.
Sometimes we forget why we started drinking coffee in the first place.
It wasn't to win an argument on the internet.
It was to slow down.
To enjoy a quiet morning.
To sit with family.
To have one peaceful moment before the rest of the world wakes up.
