Thankfully, coffee rarely "goes bad."

Coffee Doesn't Spoil Like Milk
When we think about food going bad, we usually picture something that's acquired an aroma that is usually quite unpleasant or take on the text of yogurt that isn't quite smooth anymore if you know what I mean. Your mind rightfully jumps right to question if it is safe to eat.
Milk sours.
Bread grows mold which is actually penicillin... (but please don't confuse that with medicine).
Fruit begins to rot.
I have outstanding news! Coffee is different!
Roasted coffee is naturally very stable, unless moisture finds its way into the bag or mold develops, which is extremely rare, coffee is generally safe to drink long after it's been roasted.
So then I'm guessing that your wondering what changes, I'm proud to say it isn't the safety of the coffee.

Freshness Slowly Fades
Inside every roasted coffee bean are hundreds of delicate aromatic compounds.
Those spectacular compounds are responsible for everything we love about great coffee and it's unique tasting notes such as:
Chocolate.
Caramel.
Citrus.
Berries.
Roasted nuts.
Floral aromas.
As time passes, those compounds slowly begin to disappear.
Coffee doesn't suddenly become "bad."

Direct sunlight gradually breaks down the delicate compounds inside coffee.
That's why coffee is happiest in an opaque bag or a cabinet—not sitting on a bright kitchen windowsill.

Heat accelerates aging.
Coffee doesn't like being stored above the stove, beside the oven, or anywhere temperatures regularly fluctuate.
A cool pantry is almost always the better choice.

Roasted coffee acts like a sponge, it is actually very porous.
It absorbs humidity, odors, and moisture from the surrounding environment.
That's why we recommend avoiding the refrigerator.

If coffee has been stored reasonably well, it's probably still safe.
However, it's time to replace it if you notice:
