The Science Behind Cold Brew

Hot water extracts coffee quickly.

Cold water extracts coffee slowly.

That difference changes everything.

The long extraction time allows water to dissolve many of coffee's sugars, chocolate notes, and aromatic compounds while generally extracting fewer of the compounds responsible for bitterness.

Because extraction occurs over many hours rather than minutes, grind size becomes especially important. A coarse grind slows extraction while helping create a cleaner final concentrate.

Step-by-Step Brewing Guide

Step 1 – Grind Your Coffee

Grind one pound of coffee to a coarse consistency.

Why This Matters

A coarse grind promotes even extraction while making filtration much easier.

 


 

Step 2 – Combine Coffee and Water

Add the coffee and one gallon of filtered water to your brewing container.

Stir thoroughly until every ground is saturated.

 


 

Step 3 – Let Time Do the Work

Cover the container and allow it to steep for 30–36 hours at room temperature or in a cool location.

Step 4 – Filter Carefully

Remove all coffee grounds using your preferred filtration method.

For an especially clean concentrate, filter a second time through paper.
