Roast: Medium to Medium Dark

This coffee has been dried using the honey process. Don’t be confused as there is no actual honey used in the process. This is the name used for when coffee is washed but some of the pulp layer (mucilage) remains. This layer is sticky like honey (thus the name) before it dries. This emphasizes different flavors when compared to natural (dried as picked) or washed (outer layers removed) processing.

Importer’s Cupping Notes: Caramel, Citrus, Floral, Nutty.

This coffee is grown at Finca Santa Teresa in the Chiriqui region of Panama. The beans are grown at elevations ranging from 1400m to 1800m above sea level. The farm “is blessed with rich black volcanic soil, a high altitude location and favorable weather patterns associated with both the Pacific and Atlantic Oceans; this results in coffees of singular quality. The Finca is located along a series of beautiful valleys and ridges which create a variety of micro-climates and give individuality to each of their lots.”

Finca Santa Teresa carefully handpicks and processes all the coffee at their mill. FST is dedicated to helping the planet and the community as evidenced by the following statement. “Our farm is UTZ certified meaning we comply with their sustainable standards and implement better farming practices, with respect for people and the planet. We have built our own school for the young children of families who work on the farm each harvest and we work with the charity Casa Esperanza. Casa Esperanza Panama provides opportunities for children and teenagers by providing access to health, nutrition and training services as well as teachers for schools. In turn the goal is to empower the children to educate their families and give them the skills to gain meaningful employment in the future to support their family. FST supports this charity by hiring teachers for the children of the farm. In addition to this we work with the local hospital in Volcan, ensuring regular medical visits and providing health education for the staff. We are in the process of converting as much of the farm as possible to solar power.”
