We only use the highest grade 100% Arabica coffee beans from small farms in Mexico. We focus on direct and/or fair trade in order to ensure that those who take care of us are well taken care of themselves.
Our Roaster's Notes
Medium - We are excited for you to experience your first sip of these outstanding coffee beans. You will taste the most wonderful start of milk chocolate, slowly moving to salted caramel, and finishing with a light yet very enjoyable juicy apricot. This is one of my personal favorite coffee beans that I roast for all of our guests. They simply never disappoint!
Dark - The dark roast sends the medium roast flavors a bit more into the background and brings forward the dark chocolate and roasted coffee flavors while still allowing salted caramel and juicy apricot to come out and play towards the end of your drink.
From rugged mountains to dry desserts, Mexico has more than 8 eco systems that make it the amazing country it is. Mexico lies in the Ring of Fire, a major area in the basin of the Pacific Ocean where many earthquakes and volcanic eruptions occur. The active volcanoes are what contribute to the excellent soil conditions allowing for excellent coffee.
Mexicans have a festive spirit which is evident in their many holidays that have their own festivals. With extreme symbolism and importance, these holidays are routed in past events and religion that resemble the culture. Their meanings are preserved through traditions and celebrations including what they eat and what they wear.
Coffee is Chiapas' most important cash crop with a history from the 19th century. Many Chiapas coffee farmers are indigenous and grow the coffee under the shade of native trees without the use of chemicals and pesticides. Some of this coffee is even grown in environmentally protected areas, as Chiapas' rainforests are home to thousands of animals and plants, some of which cannot be found anywhere else in the world. On top of this great biodiversity, high altitudes, steady rain, and volcanic soil all factor into this coffee.
